Being southern white trash, I understand the concept of "dining as sport". But it seems that the cajuns take things to an ENTIRELY new level. The words on this park bench are hazy, but it doesn't matter. Outsiders like myself very ignorant about the plethora of trash-meats that are served in this strange corner of the world. The only word I understood was "sausage". And as for the others, we really don't want to know.
